Maple Mustard Chicken & Potatoes

Ingredients

  • 4 skinless, bone-in chicken thighs
  • 1 to 1.5 pounds small new potatoes (about 1 to 1.5 inches in diameter), halved
  • 1 tablespoon olive oil
  • Salt and fresh ground pepper to taste
  • 1/3 cup brown mustard
  • 1 tablespoon yellow mustard
  • 1/4 cup maple syrup
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F.
  2. Drizzle the chicken and potatoes with olive oil and season with salt and pepper; transfer to a nonstick pan or 12-inch oven-safe skillet. Set aside.
  3. In a small mixing bowl, combine brown mustard, yellow mustard, and maple syrup; whisk to combine.
  4. Pour the mustard mixture over the chicken and potatoes; toss to coat.
  5. Bake for 45 to 50 minutes, or until chicken is done cooking and potatoes are tender.
